After sampling our artisan cheeses this past weekend, many of you asked for the recipe for Becky's Bleu Cheese Sauce. It's wonderful drizzled over a tenderloin or atop a hamburger to create a Bleu Cheese Burger. Enjoy!
Bleu Cheese Cream Sauce:
4 Tbsp Butter
6oz Bleu Cheese
1 1/2 cups Cream
Melt butter in skillet. Add the cheese and mash it as it melts. Stir in cream. Salt and pepper to taste. Serve warm over meats. For a different twist, try adding a few shallots.

Blue Cheese Stuffed Pork Chops
2 - Pork Chops 1 1/2" thick
2 T. Olive Oil
4 oz. Ader Kase Blue Cheese
Salt and Pepper
1/4 C. Balsamic Vinegar
Make a large slit in each Pork Chop. Stuff 2 oz. of Blue Cheese in each. Press down gently. Pat the Pork Chops dry and season with Salt and Pepper. Heat Dutch oven on stove over medium high heat. When pan is hot add the Olive Oil. Add the Pork Chops and sear on each side for 2 - 3 minutes until they just release from the pan. Reduce heat to low and add the Balsamic Vinegar. Cover and cook approx. 30 minutes until Pork is just barely done (145 -150 degrees).
The Goose Gang’s Mexican Egg Bake
½ C. Butter
10 Eggs
½ C. Flour
¼ tsp. Salt
1 T. Baking Powder
2 4oz. cans Green Chilies
¼ C. chopped Red Pepper
16 oz, Cottage Cheese
2 C. shredded Cheddar Cheese - divided
¼ C. chopped Green Onion
¼ C. chopped Tomato
Melt Butter – use a small amount to butter a 9x13 pan. Beat the Eggs, then add the
Flour, Salt, Baking Powder and remaining Butter. Beat well. Stir in the Cottage
Cheese, Chilies, Cheddar and Peppers. Pour into pan.
Bake 400 for 15 minutes – then reduce heat to 350 and bake another 35 minutes.
Remove from oven and top with remaining Cheddar. Garnish with Tomatoes and Onions.
Serve with Tequila Line Salsa
The Goose Gang’s Biscuit & Sausage Egg Bake
1 lb. Pork Sausage – browned and drained
10 lg. Eggs
1 C. Milk
1 C. Heavy Cream
1 tsp. each Salt & Pepper
2 pkg. Flakey Biscuits
2 C. shredded Cheddar – divided
Spray a 9 x 13 pan with nonstick cooking spray. Beat eggs with Milk and Cream.
Season with Salt & Pepper.
Separate the Biscuits and cover the bottom of the 9x13 pan. Layer ½ the Sausage,
½ the Cheese and rest of the Sausage, reserving the rest of the Cheese for later.
Pour the Egg mixture over the Sausage.
Bake 350 for 35 minutes. Remove from oven and top with remaining Cheese.
Can be made the night before and refrigerated.
In the morning, let set at room temp for 1 hour before baking.
